In a single site, a single vineyard for a single type of grape, creating a unique product. Brave choice of Maura Sarno, cultivating in a single site a vineyard only of Fiano, which for her means authentic expression of the territory. Candida, an ancient village in the province of Avellino, is located 600 meters above sea level. In a calcareous clay soil, the vines benefit from cool nights and mild summers, well tolerating winter snow. The subsoil in spring returns heat and moisture to the roots thus favoring minerality and water supply to the vines. In winter an important pruning is carried out in order to limit the quantity of vine bunches for the benefit of quality. In summer, leaf removal and green pruning allow the bunches to be aerated, guaranteeing perfect exposure to the sun. The harvest takes place in full technological, phenolic and aromatic maturity in mid-October and is carried out strictly by hand, to avoid any kind of stress to the grapes. The mashing of the grapes follows immediately with a pneumatic cage press closed. The soft pressing allows to obtain a must rich in varietal aromas. The aging of about 6 months on fine lees contributes to the complexity and minerality, making the finish very persistent. Vinification (First vinification: 2009) is entrusted to the oenologist Vincenzo Mercurio who has given this fiano a vibrant and delicate style.
