La Secchia Antica Acetaia

Traditions and family vocations are what have driven the Antica Acetaia La Secchia di Modena to produce balsamic vinegar. The company diligently follows the antique recipe, which was made official in May 2000 by the regulations governing the production of D.O.P. (protected denomination of origin) balsamic vinegar.

Aceto Balsamico IGP

The “Aceto Balsamico di Modena IGP” by La Secchia Antica Acetaia is the fruit of a long artisanal experience based on a love for tradition and a respect for its “rules”.

This balsamic vinegar is produced using the highest quality of raw materials as well as rigorous and accurate procedures that exclude any use of chemical additives or artificial flavourings.

The result is a full bodied and balanced product, where sweet and sour fuse together in perfect harmony to accompany and bring out the flavours of some of your favourite dishes.

All type of “Aceto Balsamico di Modena IGP” is the result of patiently selecting just the right autoctone cooked must grapes aged in wooden barrels, which represent a line of excellent products that is capable of satisfying even the most refined culinary requests.

Aceto Balsamico DOP

This ancient and noble condiment is made with the must of local grapes, which are cooked over a direct flame and then aged in valuable wooden barrels. The Refined balsamic vinegar has been aged for almost 12 years and comes in a black package while the Extra Aged one has been aged for at least 25 years and comes in a gold package.

This balsamic vinegar has a rounded but sharp flavour, which makes it ideal for enhancing boiled meats, seafood dishes and frittatas in its pure form and may be drizzled over beef fillets or mixed into risottos directly in the pan right after cooking to bring out the flavours. The extra aged balsamic vinegar is a product of the utmost quality and has the perfect thickness, complexity and long-lasting taste.
