Pastinum in Latin was properly "hoe" and, derivatively, "land destined for the vine". Thus the hoe shaped the "cacalupo", the small earth dam necessary to collect the water of God, in this Apulia sitibonda, then as now. Putting "il pàstino", in this valley with a sweet profile, is an ancient and difficult art: planting "the vines" in the stone with the Verdeca, Bianco d'Alessano and Minutolo saplings and wait for the sun to mature slowly, it is the fruit of ancient experience. The "i Pàstini" winery, located in the heart of Valle d'Itria, the land of the trulli, strives to maintain the wisdom of the traditions also with the modern winemaking technique, thus succeeding in obtaining the best oenology Puglia knows how to produce. The "I Pàstini" winery was founded in 1996 and is located in the heart of the Valle d’Itria (the valley of the trulli) in Puglia. Making use of the ancient viticultural traditions and with the help of modern enological techniques in order to obtain wines that express the new face of the local viticulture. Managed by the Carparelli family on a vineyard area of 12 hectares with the aim of recovering and enhancing the native vines: the Verdeca, the Bianco d'Alessano and the Minutolo, white berry varieties that confirm the ancient viticultural vocation and the wines that if they produce represent the authentic and genuine expression.
