Sibona is a historic Italian distillery, located in Piedmont, in the Roero area, in Piobesi d’Alba. Its origin dates back to the thirties and since then it has remained an unchanged symbol of qualitative excellence, in respect of traditions and in the continuous search for new flavors. As a testimony of its great past, the Sibona distillery owns the number 1 distillation license, which was first released by the U.T.F., the superintendent finance body for all the distilleries. The high quality craftsmanship of SIbona's work has led it year after year to seek a renewal of its machinery, passing from the use of an old steam locomotive to the use of copper stills for steam distillation of the pomace fresh. The same historical site of Sibona is an old furnace, modernized in 2003 through numerous investments, which have enriched the distillery with a new cellar in which to let the grappas rest. At the base of Sibona's work there is the intent to preserve and pass on the ancient Piedmontese traditions, making their grappas the symbol of a centuries-old artisan history. Sibona grappas are made exclusively with the vines of the most important Piedmontese wines: Nebbiolo, Barbera, Dolcetto, Moscato, Chardonnay, Arneis and Brachetto. Every aroma and every flavor is captured, thanks to the prompt processing of the selected marcs just picked. There are three oenologists working on the distillation of grappas, which are then placed in tonneaux: the result is a harmonious balance between softness and complexity, pleasant flavors of ancient Piedmontese traditions.
