The Brut Réserve is composed of wines exclusively coming from the cuvée (the must produced from the first pressing) and, if necessary, by blending wines useful to impart a basic most important tannins. The alcoholic fermentation takes place at controlled temperatures to maintain the characteristics of fruit and aroma. After the tasting, assembly, bottling and second fermentation, the Pol Roger Brut Rèserve remains in contact at least three years on the lees in the cellars of Epernay: this is, according to the Maison, the time required for the wine aromas express full and the foam ensures effervescence fine and delicate.
