That of the Servin family is one of the largest Domaine in the Chablis area, a rather unique territory located north-west of Burgundy whose characteristics, which are an absolute exception, give Chardonnay to be considered without a shadow of a doubt among the best in the world. The history of the Servin family dates back to the second half of the seventeenth century, and it is exactly from 1654 that the Servins themselves appear to be active in the Chablis. Today the seventh-generation propriétaire-récoltant, the Servins can boast possessions for a total of 35 hectares of vines, which extend over all the main appellations of the Chablis: Petit Chablis and Chablis, Chablis Vieille Vignes from massal selection, to which are added four Premier Cru (Montée de Tonnerre, Vaillons, Forêts and Butteaux) and still four Grand Cru (Les Preuses, Bougros, Blanchot and Les Clos). Many parcels of vines, therefore, characterized by different microclimates and by various peculiarities, such as to ensure that a very varied range of wines can be born, whose labels offer different organoleptic properties, making the Domaine Servin one of the most complete and intriguing of all the Chablis from the point of view of the qualitative offer.Among the rows, respect for the environment, nature and ecosystem is the maximum, so the vines are bred with method and rigor, trying to respond to the needs of each individual plant. In the cellar, the philosophy that is followed is not very different, so in the sign of the most deeply rooted and ancient local traditions, the fruit is always processed and interpreted pursuing the main objective, aimed at highlighting and enhancing what the season and the territory are been able to express in the grapes. Wines, those that refer to the Domaine Servin, simply excellent, to be discovered one by one to understand the beauty of a territory as unique as that of the Chablis.
